Migas

There aren’t any photos today of the Memorial Day feast Andrew and I had on the balcony last night [complete with mosquito deterring candles–how romantic!]. I put them on my computer last night, but didn’t get a chance to go through them. I was too frustrated/tired after taking an income tax exam. Sleep sounded like the way better option.

I woke up refreshed, hit the park with Roma, and then snuck off to the gym at lunch to read for class. I usually print out my chapters and tackle the stairmill for a couple miles. It felt good. I’m still on the fence about renewing my membership at the end of July. I’ll admit I was sad when I saw that they’re closing the gym for three weeks to remodel it. What will I do at lunch? I went for years without a gym membership, though, so I know it’s possible.

In yummier news, I’d like to introduce you to the awesome migas I made Saturday morning. Despite not having tortillas to wrap them up in or avocado to smother them in, they were really, really good. I baked up some thinly sliced potatoes as a side. They were a mix of slightly soft and super crispy chips. Good stuff. This recipe makes two perfect little portions. They aren’t going to make you skip lunch unless you really ramp up the sides dishes or double the recipe. It’s up to you.

Inspiration: Eat, Live, Run

Ingredients

  • 4 eggs
  • 1/2 cup tortilla chips, crushed
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • Handful of sun dried tomatoes, diced
  • 2 serrano chiles, diced
  • 1 spicy sausage, sliced and then quarter each slice [I used Zenner’s]
  • 1 tablespoon olive oil
  • salt and pepper
  • shredded cheese, salsa, tortillas, avocado, optional

Preparation

  1. Heat the oil in a skillet on medium high heat.
  2. Add the onion, red pepper, chilies, sausage, and tomatoes.
  3. Stir occasionally until the onion becomes tender and the chilies are fragrant.
  4. Whisk the eggs together in a bowl before pouring into the veggie mixture.
  5. Stir together, scrambling the eggs with the veggies.
  6. When the eggs are almost cooked, add the crushed chips.
  7. Stir well and add salt and pepper to taste.
  8. Serve with whatever goodies you deem appropriate.
PS – I’m craving scallops like whoa [thanks, Debbie!].

  • Migas is one of my faavorite quick dinners! Although I cheat and use stale tortillas instead of fried tortilla chips, and black olives are an absolute must.

  • I’d never heard of migas–yours look good though! And sleep after a tax exam sounds like a much better option.

    I’d die without my gym membership, but I live with three roommates, so the gym also ends up being a great way to get out and away 🙂

    • Sometimes I swear I could live at the gym. There was a period of time I’d go every day from 11pm and stay for at least an hour and a half. Then there was every day at lunch. I was kind of an addict, and on the verge of injury. Whoops! So I tried to lay off and take up yoga instead. Considering how sore I am today after 90 minutes of it, I’d say its working.

      Also–three roommates?! More power to you. I don’t know how you do it.
