Prosciutto Wrapped Asparagus
Okay, so I don’t even know if this really qualifies this as a recipe, but you know what? I don’t care. I happen to love it, and I also think this is one of the better photos I’ve taken.
The farmers market that’s open every Wednesday by the office started yesterday. I knew I needed a bunch of asparagus, which was perfect to wrap in prosciutto to take to a friend’s house to sample their home brew [Andrew wrote about it here].
We sampled some really great stuff. I don’t know that he had a bad beer in the whole house. We even were able to take a few bottles for the road. It was a perfect end to a gorgeously sunny day [which has promptly decided to leave today]. Well, that and the Jack in the Box we had afterward. My most favorite fast food ever [next to In-N-Out, which isn’t here so is mostly irrelevant].
We’re taking tomorrow off to head up the gorge to Hood River. I’ll hopefully remember to take the camera.
Ingredients
- 1 bunch of asparagus, rinsed and ends trimmed
- Olive oil
- Salt
- Pepper
- 6-8 slices of prosciutto [depends on how much asparagus you have]
Preparation
- Preheat oven to 400º.
- Toss the asparagus in olive oil and coat with salt and pepper to taste [I actually used my new oil sprayer. It worked pretty slick–badumpsh]
- Arrange on a baking sheet [preferably lined with silpat].
- Roast for 15 minutes.
- Remove from oven and let cool.
- Slice prosciutto in enough pieces to wrap some around each stalk.
- Good luck not eating the prosciutto before you wrap the asparagus.
- Good luck not eating the asparagus before you wrap it.
- Arrange them how you see fit.
- Trade them for your friend’s home brew.
- Wonder why you’re getting a good buzz, and then remember you’ve only eaten prosciutto wrapped asparagus.
I think you know what my opinion of these would be, but I know you’r Dad would really enjoy them. Enjoy the gorge. Love ya, Mom
