Pan Roasted Chipotle Salmon

Quick.

Simple.

Spicy.

[May or may not pair well with that beet and bulgur salad].

Salmon will never, ever get old.

Inspiration: Everybody Likes Sandwiches

Ingredients

  • 1 pound salmon
  • 3 green onions, chopped
  • 2 chipotles in adobo, chopped
  • 1 tablespoon adobo sauce
  • 1 tablespoon lemon [or lime] juice

Preparation

  1. Place a cast iron skillet in the oven while you’re preheating the oven to 400º.
  2. Top the salmon with all of the remaining ingredients.
  3. Once the oven is preheated, remove the pan and place the fish in it, skin side down.
  4. Place in the oven for 10-15 minutes, depending on the size of your fish [mine went to 15].
  5. Cut into pieces and serve.
