Angel Hair with Sauteed Clams

Yup. More carbs. You know who isn’t surprised? This girl.

I eat a lot of them. Carbs are my weakness, which is why I was probably a whole lot bigger back in the day [and, y’know, the multiple cans of soda and general out of control portions]. I could easily eat thirds, fourth, and fifth helpings of anything bread, cake, or pasta related. It’s just so versatile and amazing. You can have just about every texture and every flavor baked in or onto it.

I try to do it in moderation now because I don’t believe in denying myself a damn thing. I love working out, don’t get me wrong, but I don’t need to spend every hour of every day there. I also don’t believe in the ‘diet’ word. Lifestyle. It’s all about incorporating a lifestyle.

Speaking of the gym, has anyone tried one of those PiYo classes? It’s a mash-up of pilates and yoga, but at an aerobics pace. I can dig it. I’ll probably keep going every now and then for something different. I definitely could use the increased flexibility.

Anyway, back to the pasta. I’ve fallen in love with angel hair as of late. Especially this whole grain kind that Barilla is sporting. It doesn’t taste like cardboard, not that I know what cardboard tastes like…

Adapted from Eat, Live, Run – Serves 1

Ingredients

  • 3oz angel hair pasta, cooked according to package instructions
  • 6.5oz can of chopped clams, drained save for 1/4 cup of clam juice
  • 1/4 cup onion [or shallot], diced
  • 1 garlic clove, diced
  • Red pepper flakes
  • 2 tablespoons lemon juice
  • Parmesan cheese

Preparation

  1. Saute the onion and garlic in a little olive oil [or butter or both] until onion starts to turn translucent
  2. Add the clams, clam juice, lemon juice, and red pepper flakes.
  3. Mix thoroughly and let simmer for a few minutes.
  4. Top the pasta with the clam mixture.
  5. Sprinkle with Parmesan cheese.
  6. Enjoy with a glass of white wine because I said so.
